Ingredients:
onions: 1 no
Parsley: 15gms
maggi cubes/ or vegetable stock: 7gms
potatoes: 2nos
olive oil: 45ml
eggs: 3nos
Salt: 1/2tsp
Method:
1.Peel the potatoes and onions and cut into cubes
2.Rinse well and drain the potatoes in a large skillet, heat oil and add the potatoes onions cubes
3.Lower the heat and stir gently until the potatoes are soft and onions golden
4.Beat eggs well stir in the parsley and pour in the pan When the edges are golden brown turn and lift then by frying gently
5. once the other side is golden remove from heat and serve immediately.
