Recipe: Tom Yum Soup



Ingredients:
Shrimps: 250gms
Water: 750ml
Garlic cloves: 2nos
Kaffir lime leaves: 5 nos
Fresh galangal: 5 nos
Fish sauce: 60ml
Shallots: 2nos
Straw Mushrooms:1/2cup
Lime juice: 60ml
Blanch Chilly paste: 1tsp
Lemon grass: 2stalks
Cilantro or coriander: 1tsp

Method:
1.Rinse the prawns shell and place them in a large pot with water heat to boiling point strain the broth and discard the shells
2. Add the garlic lime leaves, fresh galangal, fish sauce, lemon grass and shallots to the stock Than the mushrooms and chilly peppers cook gently for 2 mins if using
3. Add the shrimps to the sauce and reheat to boiling point when the shrimps are cooked place the lime juice and black chilly paste in a serving bowl pur the soup into the bowl stir garnish with cilentro leaves and serve hot.
