Recipe: Melanzine parmiggano






Ingredients:
Brinjals: 6nos
Butter: 30gms
Salt: as required
Basil leaves: 1 bunch
Mozzerella cheese: 200 gms
Tomato sauce: 500gms
Olive oil: 30 ml


Parmessan cheese: 50gms

Method:
1.Preheat the oven to 180 degree C
2.place the brinjals on a baking tray than brush with olive oil place in the oven until soft and remove.
3.Butter a baking tray than layer the bottom with brinjals. Season with salt. cover with the tomato sause, parmigiano reggiano chop basil leaves and morzzella Repeat for atleast 3 layers of brinjals only.
4.Cover the last layer of brinjal with only tomato sauce than place a few rounds of mozzerella slices on top bake in a 180 degree oven for 20 mins Allow to rest for 10 mins before serving
