Recipes Poulet saute chasseur

Poulet Saute Chasseur:
Ingredients:
Butter 50gms
Chicken 1.2kg
Shallots 10gms
Button Mushroom 100gms
Dry white wine 20ml
Demiglace 250ml
Tomatoes 200gms
Parsley 5gms
Tarragons 5gms


Method:
1. Place the butter in a saute pan on a fairly hot stove
2. Season the pieces of chicken and place in a pan in a following order : drumsticks, thigh, carcus, wings, winglets, breast
3. Cook together till brown on both sides
4. Cover lid and cook on a stove or oven until tender
5. Dress an entree dish Add shallots saute in a pan.
6. Cook on a gentle heat for 1-2 mins Add wash cut mushrooms and saute for another 3-4mins
7. Drain off fat add white wine and reduce by half add demi glace and jus lie add tomato concasse Simmer for 5 mins
